Hushpuppies




1 1/2 cups cornmeal
1/2 cup all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 1/4 cup plain yogurt
1/4 cup milk
1 egg, beaten
4-5 scallions, chopped
salt
pinch of cayenne pepper
oil for frying

In a large bowl sift together cornmeal, flour, baking powder, baking soda, salt and cayenne pepper. In another bowl mix together egg, yogurt, milk and scallions. Pour yogurt mixture into flour mixture and stir just until combined (do not over-mix or the hushpuppies will be dense).
Pour oil into a large pot (about 2 inches of oil) and heat to 375F or over medium heat. Working in batches, and using greased teaspoon, drop spoonfuls of batter into hot oil. Fry until golden brown (turning once). Transfer hushpuppies to a paper towel and sprinkle with additional salt, if desired.
