1 lb ground chicken breast
1/2 lb ground beef
1 onion, finely diced
1 carrot, finely diced
1 celery stalk, finely diced
1 garlic clove, minced
1/2 large yellow bell pepper, finely diced
1/2 cup bread crumbs
1/2 cup milk
1 large egg, lightly beaten
1/2 cup marinara sauce
shredded cheese
fresh parsley, chopped
paprika
salt and pepper
Preheat oven to 350F.
In a large bowl combine chicken, beef, bread crumbs, milk, egg, salt, pepper and paprika. Cover and place in the refrigerator. Meanwhile, in a large skillet, saute vegetables (start with onion, add carrots and celery, than pepper and garlic; sprinkle with salt and pepper) until tender. Add parsley and set aside to cool.
Combine vegetables with meats and transfer into a baking dish. Shape into loaf, make indentation around sides and spread marinara sauce over the top. Bake on 350 F for about 45 minutes, remove from oven, sprinkle with shredded cheese of choice and return to oven. Bake until cheese is melted.

Marinara sauce can be substituted with 1/2 cup ketchup, 2 tsp brown sugar and 1 Tbsp balsamic vinegar.
Forgot to mention yesterday, if you decided to substitute marinara with ketchup glaze, omit cheese.
